LOLOL!
Lemme run my weekly menu past ya'll; last week's highlights (recipes upon request!)
Breakfast: 1. Twice-baked bruschetta Whole grain portuguese rolls; grilled with margarine, then topped with a mixture of tomatoes, spinach, garlic, mushrooms, balsalmic vinagrette, and grilled shrimp. Topped with cheddar cheese and broiled to perfection
2. Shrimp & Grits w/a twist medium shrimp marinated in cilantro and lime, gently sauteed with fresh tomatoes, garlic, red wine and saffron petals...spooned over buttery, cheesy, garlicky hominy grits whipped tight.

Lunch: Dreamy Chicken-- I named it this because the recipe came to me in a dream in 2006. Whole chicken breast marinated overnight in red wine, garlic and thyme. Stuffed with a mixture of spinach, sundried tomatoes, broccoli spears, zucchini and mozzarella cheese baked covered, then topped with butter-mushroom sauce
Farmer's Market Quesadillas-- wheat tortilla stuffed with sweet potatoes, cheddar cheese, baby bella mushrooms, spinach, grilled with a homemade salsa of: diced tomatoes, diced gala apple, minced onion, diced jalapenos, corn, my special vinagrette and spices

Dinner:
Thai Peanut-Curry Chicken-- Chicken breast (marinated in dry spices and garlic) slice uber-thin, sauteed with onions and string beans, then smothered in my special peanut sauce, mild curry served over bright white rice
Byron Lee Rice-- So named because it's both Asian and West Indian. Shrimp marinated in west indian green seasoning and mint chutney tossed together in an oiled wok with onions, garlic, and green veggies...topped with bean sprouts, spices and a beaten egg

*SMH* How do you have time to cook all this stuff?It's exam-time. I'm home all day these days, so I actually have time to cook extemporaneously. Not for nothing, I normally have some meat seasoned in various ways (Asian, Caribbean, Indian and Italian) so that whenever the mood hits me, I can get right to the stove without having to wait til the next day. I do a LOT of ahead-of-time food prep (got veggies already cut, various sauces and broths already made, etc.) so it rarely takes me over an hour to go from bright idea to on-the-table

Can we make this post "sticky"--so it's always at the top of the page? That way Leja (and anybody else) can post recipes. I know I said I hate to cook--but JESUS has forced my hand. Due to the bad economy, all of my favorite cheap restaurants near me are shutting down. So I'm backed into a corner--I HAVE to cook now. So this post would be handy. The good thing is, I'm getting plenty of use out of my new grill!

The couscous had diced apples, chopped reconstituted raisins (soaked in hot water and wine) and a little cayenne pepper
