Corn Soup
In a large pot 2/3 full with water, bring to a boil: 2/3 cup of yellow split peas, 3 or 4 whole baby carrots, and two nice big chunks of butternut squash (seeds and ish removed, but you can leave the skin on if you wish).
When split peas are burst and tender, drain all excess water and remove corn cobs. Put all remaining ingredients in a blender or food processor and puree until smooth.
Remember the pot you were using? Turn the fire back on, drizzle about a tbsp of olive oil. Drop in a tbsp of minced garlic and a tbsp of west indian green seasoning (if you don't have this, you can use Goya Recaito Soup Base). Once everything gets all hot and bothered, pour the velvety smooth blended veggie mixture back into the pot. As it heats, add salt, pepper and spice to taste. Cut the corn cobs into inch-wide pieces and throw them in. Add water until you reach your desired soupy consistency.
Enjoy!
